5 Deliciously Quick Weeknight Recipes
When we sold our house and first moved into the promised land of suburbia, a lot of things in our life changed. One of the major perks? The mecca of chain restaurants and fast food stops available just a hop and a skip away from where we live!
But when you work full time and have a little one at home you always seem to be pressed for time. It’s easy to fall into the habit of stopping and “picking up” something on the way home.
Unfortunately our wallets, and my lingering love handles, HATE when we do this.
In the midst of this ever constant struggle, my redemption tends to be found in none other than Pinterest.

EASY QUICK WEEKNIGHT RECIPES
Somewhere around age 30, my Pinterest habit shifted from simply pinning cute outfits and home decor ideas to RECIPES, RECIPES, RECIPES.
If you’re like me and don’t have the time (or skill) for overly complex dinners with hard to find ingredients, I’ve included 5 of my go-to weeknight Pinterest recipes here.

1. Crockpot Chicken and Stuffing
When you need some downright home cooking without all the work that typically entails, this is the recipe for you. If you’ve got a crockpot and 10 minutes, you’ve got a killer meal to feed the whole family. I like to put this one on before church on a Sunday or before heading in to work in the morning. Healthy and so incredibly easy! I love this particular recipe because it requires barely and dishes, and it’s so healthy and delicious but makes you seem very fancy. (From Cooking Classy)
4. Portobello Fajitas
Okay so I had to get a meatless option in here. These fajitas are vegan, and absolutely delicious! I swear you won’t miss the meat because they’re so jam packed with delicious flavor. We love doing these with a side of chips and guac. (From The Garden Grazer)
5. Sausage and Veggies Foil Packs
Y’all may be realizing I’m a real sucker for meals in foil packets. For this one all you’ve got to do is dice up a bunch of veggies and whip together some seasonings. This recipe makes a big batch perfect for leftovers and packing lunches the next day. (From Chelsea’s Messy Apron)
